American Paddlefish Caviar
Paddlefish Caviar is one of our signature caviars. The pearls have a pale gray to steel gray color with golden brown tones that will melt in your mouth. The Paddlefish is a North American fish and a close family member of the Sturgeon and dates back over 300 million years. This fish is large in size and each one can weigh anywhere from 15 to 60 pounds depending on the river system they are caught in. The name Paddlefish or Spoonbill comes from the “paddle” like snout that is used to find its primary food source, the zooplankton.
This caviar is wild caught and the only ingredients are roe and salt.
