Caviar is a delicacy that is known around the world.  The female sturgeon and paddlefish are among the oldest and largest species of fish living on earth.  The commercial fishermen use nets made of webbing to catch this type of fish following the guidelines in the industry.  All of the fish the fisherman catches is brought to a processor where the roe that was extracted from the fish is processed with salt to become caviar.  We believe wild caught fish produces caviar that is superior to pond raised fish.  Fish that swims in rivers and lakes are leaner and have less fat, which produces a more beautiful product with a robust flavor.
