Hackleback Caviar (Scaphirhynchus Platorynchus), also known as Sturgeon Caviar, comes from the Shovelnose Sturgeon. This wild freshwater caviar is found in the Missouri, Ohio and Mississippi River systems in the U.S. They have a gray, almost black, color and a medium sized pearl. The flavor is unique with an intense nutty, buttery taste, which is similar to the Osetra and Sevruga caviar from the Caspian Sea. Our wild Hackleback Caviar comes from the Mississippi River in the U.S.A.

This product is one of our signature caviars. It is purchased direct from the fisherman, processed in our facility and packaged for wholesale and retail sale. We use only the finest sea salt in our processing. We harvest the fish and the roe for resale.

The American Hackleback Sturgeon Caviar is one of our signature caviars that is wild caught and processed in our Tennessee facility. Hackleback Caviar, also known as Sturgeon caviar, has a dark gray, almost black color and a medium sized pearl. The flavor is unique with an intense nutty, buttery taste, which is similar to the classic Osetra and Sevruga caviar from the Caspian Sea. The Hackleback (Shovelnose) Sturgeon are wild caught and the most abundant sturgeon found in the Mississippi and Missouri River systems.

This caviar is wild caught and the only ingredients are roe and salt.

Packaging: glass jars & tins.
Storage: Keep refrigerated at 36F or below.
Shelf life: Consume 10 to 14 days. Upon opening, put a piece of plastic wrap over caviar to keep air out and maintain freshness during storage.
Serving Suggestion: Hackleback Sturgeon Caviar – this black caviar can be exquisitely served on a slice of Smoked Salmon on top of a blini.

Shipping Information: This product is perishable and is shipped via FedEx overnight delivery arriving between 9:00 am and 8:00 pm. Orders ship next day during the holidays – November and December. During off season months, orders may take 1 to 2 days to process and ship. We strive to ship every order received by 12:00 PM CST Monday through Thursday, the same business day. Orders we receive after 12:00 PM CST Monday through Thursday are processed the next business day. We strive to process every order the day it comes in, however, sometimes depending on the time of year or quantity of the order, we may need up to 2 days to process and ship the order. Orders received after 12:00 PM CST on Thursday through Sunday are shipped out Monday. We recommend that you ship to a delivery address where someone can receive the package and refrigerate immediately. Upon completion of your order, you will receive a confirmation and tracking information when the order has been processed.
