Hackleback Sturgeon Caviar
The American Hackleback Sturgeon Caviar is one of our signature caviars. Hackleback Caviar, also known as Sturgeon caviar, has a dark gray, almost black color and a medium sized pearl. The flavor is unique with an intense nutty, buttery taste, which is similar to the Osetra and Sevruga caviar from the Caspian Sea. The Hackleback (Shovelnose) Sturgeon are wild caught and the most abundant sturgeon found in the Mississippi and Missouri River systems.
This caviar is wild caught and the only ingredients are roe and salt.
