Hackleback Caviar (Scaphirhynchus Platorynchus), also known as Sturgeon Caviar, comes from the Shovelnose Sturgeon. This wild freshwater caviar is found in the Missouri, Ohio and Mississippi River systems in the U.S. They have a gray, almost black, color and a medium sized pearl. The flavor is unique with an intense nutty, buttery taste, which is similar to the Osetra and Sevruga caviar from the Caspian Sea. Our wild Hackleback Caviar comes from the Mississippi River in the U.S.A.

This product is one of our signature caviars. It is purchased direct from the fisherman, processed in our facility and packaged for wholesale and retail sale. We use only the finest sea salt in our processing.  We harvest the fish and the roe for resale.
