American Paddlefish Caviar

Paddlefish Caviar is one of our signature caviars, wild caught and processed in our Tennessee facility. The pearls have a pale gray to steel gray color with golden brown tones that will melt in your mouth. The Paddlefish is a North American fish and a close family member of the Sturgeon and dates back over 300 million years. This fish is large in size and each one can weigh anywhere from 15 to 60 pounds depending on the river system they are caught in. The name Paddlefish or Spoonbill comes from the “paddle” like snout that is used to find its primary food source, the zooplankton.

• This caviar is wild caught and the only ingredients are roe and salt.
  • Packaging: glass jars and tins.
  • Storage: Keep refrigerated at 36F or below.
  • Shelf life: Consume 10 to 14 days after thawed.  Upon opening, put a piece of plastic wrap over caviar to keep air out and maintain freshness during storage.
  • Serving Suggestion:  Paddlefish Caviar has a robust and flavorful taste and can be beautifully served on blini.

Shipping Information: This product is perishable and is shipped via FedEx overnight delivery arriving between 9:00 am and 8:00 pm. Orders are processed daily during the holiday season, November and December and shipped overnight Monday through Thursday.  Orders may take 1 to 2 days to process and ship during the off season, however, we strive to ship every order received by 12:00 PM CST Monday through Thursday, the same business day.  Orders we receive after 12:00 PM CST Monday through Thursday are processed the next business day.   We strive to process every order the day it comes in, however, sometimes depending on the time of year or quantity of the order, we may need up to 2 days to process and ship the order.  Orders received after 12:00 PM CST on Thursday through Sunday are shipped out Monday. We recommend that you ship to a delivery address where someone can receive the package and refrigerate immediately. Upon completion of your order, you will receive a confirmation and tracking information when the order has been processed.   We appreciate your patience, we are a small business and work hard to send you a quality product in a timely manner.
